I need to take lessons from y'all.

I'll do a solid sear first the night before, coming close to charring the meat. I'll throw the meat in the freezer to bring the temp down quick while I deglaze the pan. My pans take 15 seconds to clean after a sear and deglaze, especially with some stainless steel 50g pot scrubs.

I'll then stack all dry ingredients in the crock pot and put it in the fridge. In the morning, right out of bed I'll pull the crock out, add in any liquids (wine, juice/pan deglaze) and throw it in the base and start it on low. Takes about 10 hours since everything is cold.

Best of both worlds. It's not as amazing as putting it in a dutch oven but it's not time consuming either and the results are pretty darn good. A dutch oven requires me to be home. (I cook almost 7 days a week and we do not eat anything that's processed if we can help it)

a crock pot does not cook as well as a dutch oven... something to do with external 360 convection

pro - tip

throw it on a super HOT grill - super close to the heat, just for a few minutes to char everything up.

I think I know what my weekend holds.
