If you can't do the DMV test on a sportbike, you shouldn't be riding on the street as that is NOT difficult at all.
I suggest you are missing some fundamentals in motorcycle control that can only be determined in person, with a knowledgeable instructor. I suggest the CMSP course to fill in your riding fundamental gap AND give you much more info about riding safely besides how to operate the motorcycle AND give you the DMV riding test waiver.

I took my test on a 86 GSXR750. Dabbed all over the place. But I had registered at least 10 bikes, all with this particular DMV clerk, so she said, " I know you know how to ride. Pass."

I'd just like to add that I was one of those folks that rented a scooter for the DMV test. 3k miles I totaled my bike and almost killed myself.
Took the CMSP and haven't crashed since. Been riding 13 years. If only I knew what counter steering was I would have never crashed.... Moral of the story. DMV test bad, CMSP test good!

The only way a bike falls over in a tight corner is if you lose momentum, which means either the bike stalls or you have the clutch pulled in. Rear brake + keeping the throttle cracked open is all you need to prevent either. If you're comfortable feathering the clutch or using the front brake, do your thing, but knowing where that engage point is and feathering it can be tricky if you're inexperienced with the bike.

The DMV test is completely stupid and in no way representative of what riders are likely to encounter in the real world. I've been riding sport bikes for over 20 years and I can't remember the last time I needed to ride around inside a lollipop without putting my feet down...
