it's just a digital pressure cooker. has a small learning curve. I use it once a week, give or take.

I make all sorts of things in it from soups to short ribs

speaking of short ribs...
2.5#s shortribs
4 small onions
4 carrots
4 robs celery
1 cup red wine
1 cup beef broth (not needed if you make your own via underlined below)
3 tbsp balsamic
1 tbsp brown sugar
1 tbsp fish sauce
2 bay leaves
fresh thyme
6 cloves garlic
olive oil to sear
salt/pepper to taste

Brown short ribs in instant pot, remove and set aside
add 1/2 the vegetables, rough chopped
add red wine, balsamic, brown sugar, herbs
pressure cook 15 minutes to make jus/sauce (you can always use store bought broths to shortcut)

strain broth, discarding vegetables

(skip underlined if using store bought broth
add back in short ribs

pressure cook 25ish minutes, you want them to hold form

slice remainined vegetables, roast in oven till soft yet firm
remove short ribs, broil for color, keep warm

reduce broth to a sauce – if you need more sauce you can always add in broth and cornstarch.

combine and serve over polenta/potatoes/rice

Once everything is cooked, I combine back into the instant pot and keep on warm.
Everything will continue to cook so par cook everything to suit time.

Tonight is barbacoa

Leg of lamb that I smoked for an hour, last weekend.
Beef broth that contains cumin, chili powder, ancho chili, garlic, onion, lime
Put rack in instant pot
Pour in broth to just below rack
Wrap meat in banana leaves (or parchment if you lack leaves)
Low pressure 1 hour

Pull and place on tortillas with meat juice for dipping

I picked up an InstantPot on the cheap from Amazon over the Black Friday weekend. Damn thing is amazing.

There's an awesome YouTube channel called Pressure Luck that has easy-to-follow recipes. I've cooked about a dozen of his InstantPot dishes so far and they always turn out great.

And dog food, I've cooked a lot of my dog's meals in the InstantPot, a couple of lbs of chicken thighs, a bag of frozen veggies, a cup of rice, high pressure for 12 minutes and stir everything together.

Edit: I should probably add that I have yet to use the InstantPot as a slow cooker since I just don't trust leaving appliances like that on for 10+ hours.

She passed away from kidney failure about 4 years ago bro. Another reason I'm only feeding my dog home-made, people-quality food.
