And they turned out amazing



Proofed 2 hours outside of fridge and then egg wash and light score and more cornmeal



Recipe called for 10 minutes rotate 10 min but they looked done at 18

Used the wrong cut but I picked up a cheap piece of lean pork and then brined it overnight before sous viding for 20 hours at 140. THen I made a glaze of the drippings, mustard, honey, and apple cider vinegar before roasting at 450 for 15 minutes. Then I chilled and sliced thin.





Wanted to originally make Jambon Beurre but I didn't have a baguette so I made a pseudo banh mi

Beef wellington. Never easy but always worth it. I pulled around 121F and it continued to cook for 10 min and hit 135!!

So I got a Brazilian gaucho skewer and I'm marinating chicken thighs and bacon I pounded flat and marinating in miso, ketchup, garlic, brown mustard, and buttermilk. Will stack and broil in the oven. I've done it before but I didn't have a proper nail like this one to stack it on. Normally would do BBQ but the air is moderate.

Just ate my 3rd try with the Ooni Frya pellet pizza oven each time gets better. If you make Pizza you need one of these things or similar!
