I've never used SharkSkinz, but I have experience with Attack bodywork.
The lowdown:
The Attack bodywork was a breeze to install. The instructions on the attack website were complete and informative. All the drill points were clearly marked, and the bodywork fit with no trouble.
Problem areas for me were fitting the tail section over the evap canister on my 04 GSXR (I decided to remove it) and figuring out the best way to drill the upper for my Graves faring bracket.
The attack bodywork comes with a clean white primer finish that is theoretically ready for painting. It looked good enough that I didn't bother. The finish was chipped in a few places, which leads me to question whether I would trust it under an expensive paint job.
The graves bracket installation was not especially complex, however care was necessary to completely understand how absolutely everything fits before drilling any holes.
I low-sided at about 80 on turn 2, Thunderhill. The bodywork survived much better than my stock engine covers. There was a minor tear on the lower fairing, and the tail section had large chips in the primer. I noticed no cracking around any of the fasteners, a trait I consider critical for fairing survivability. Repairs should be fairly trivial.

I'd be interested in trying other brands, but I would not hesitate to recommend Attack parts.
A friend of mine runs with Airtech on her f3 race bike. The parts have all kinds of nasty scratches, but are in relatively good shape structurally. Based on that, I am lead to believe that the Air-tech stuff is pretty sturdy. It's not quite as flexible as the Attack bodywork, but is a little thicker. I can't comment on the fit, as her frame was quite tweaked when she got the bike.
