Suggestions for north bay seat shaving, recovering options?

Anyone recommend someone in sf north bay, who can reliably & affordable modify seat shape & recover? By appointment, so I can be there while its done, instead of leaving my motorcycle with no seat or left there.

The versus 650 seat i have is fine in the front half, but I don't like the inverted V shape of the rear half of seat. Much prefer the whole seat be flat like the front half already is.

Im considering doing it myself. But the recovering part im thinking may be better done by someone with experience doing it.
 
I think I'm at 8 seats I've recovered so far and it's really not hard at all. A pneumatic staple gun and YouTube is really all you need. It's one of those things that looks like you need to be an expert but it's quite forgiving in reality.
 
I once rode my bike down to Corbin. I waited. I even added foam and before I had it covered, I took it for a test ride.
 
It really is pretty easy to do. The electric carving knife (larry kahn) is a must. Buy some elastic faux leather (Amazon ~ $20)

If you don't have a pneumatic stapler you can use little screws perfectly. Start at the nose / center point and mark the center rear with chalk. Then work back switching left / right. You don't have to trim the excess around the bottom until you have satisfactorily test ridden it.
