Lead me to the land of the cast iron skillet recipes

I have a couple lodge pans (and I like them a lot) but most of my cast iron is 60+ years old. No machined surfaces there!
 
Best pan for baking corn bread. Use recipe on side of Albers box. Be careful of hot handles, as heat travels when using, and stays a long time. My skillet is an oldie I inherited from my mom, and it weighs a ton. I use stainless steel wool to clean it under hot water, and other than an occasional seasoning, it gets no special care.

Edit: I like to chop up a fresh jalapeno, and sometimes chopped chunks of cheese into the batter. When mixing the batter, mix the dry ingredients and the wet ingredients separately, then combine with just enough stirring to wet the dry. This gives air entrainment so you don't end up with a large corn tortilla.

When I hear someone mention the words "cast iron skillet" I am immediately transported back to Christmas 2007. Our mother was dying and this was to be her last Christmas. All 5 of us girls went to her house, where we all grew up, and had Christmas dinner and planned on spending the night in the new pajamas I bought for everyone. Somewhere along the way the discussion came up of my mom's treasure trove of heavily used cast iron skillets. They were being left to one daughter, and another daughter wanted some. Before the night was out, those sisters were actually fist fighting in the yard, and the younger of the 2 stormed off and spent the night in a hotel. Mom was gone 29 days later, and the one sister still possesses all the cast iron skillets. Not our family's finest hour. The skillets never get washed with soap, they get heated with oil and wiped out after every use, and they look exactly like they did when I was eating cornbread, fried pork chops, and fried potatoes out of them, cooked with a spoonful of the ever-present bacon grease on the stove, when I was little.

Edit: Neither of those sisters were me, FYI!
 
Was the bacon grease kept in a coffee can on top or the stove? That's where most people seemed to keep it. Ahh the old days.

:laughing It was kept in one of those round Kromex aluminum canisters with a black Bakelite lid! I still cook my green beans and black eyed peas with a spoonful of bacon grease, and if I don't have any I cut up a piece of bacon and cook it in the pan first.
 
my cast iron recipe: motorcycle + frying pan with lid + campsite fire ring + campfire + canned dough = joy, especially if I don’t burn anything. :laughing

Since nobody is providing the recipe here is one
beat nine eggs
find some carbs like sweet potato cubes or vegetables or whatever
saute an onion in your new pan and at the last minute throw in as much garlic as you prefer
season with whatever you like to season savory foods with, green onions are a nice bonus here especially laid on top
you know we're making a frittata at this point
grate some cheese doesn't matter what kind kind if you like it. Cheddar is good especially if you add bacon
incorporate all of these elements being careful not to start cooking the eggs with hot onion
pour out into your cast iron skillet that is well greased and cook at 350 for about 25 minutes

if you want to thinly slice rounds sweet potato you can layer them in the bottom as a base
I have made endless permutations of this dish but the base is 9 eggs and 8 ounces of cheese
let cool slightly before slicing it will separate from the pan on its own
if you wanna be fancy invert diversion with sweet potato base and it's visually stunning

now get cooking and take some pictures!

It’s one egg per inch of pan, so I should have said 12-13 for yours. Too thin isn’t good at all. And expect it to balloon up and fall back as it cools. Frittatas are the easiest dish to make and it always surprises me when people ooh and ahh at the visual presentation while giving an all-day beef Bourg effort a muted “yum.”

At the Goat Pen we only use CI and Carbon Steel.. Ok sometimes we use the stainless stuff too, but not often.


I was lucky enough to be with @SFMCjohn when he broke in his ADV CI pan along with @Cincinnatus who also brings CI on ADV rides... We ate like kings I tell you!




Recipe #1 - First use.
Sautee a shite-load of onions before you cook anything... Toss'em out when your done and cook some bacon (you can eat this).... Your pan is now ready for anything.. YMMV of course.

Recipe #2 Basic Egg Sando's
Put some oil or butter (plenty of it) and heat your pan. If you can pinch the edge with your fingers the pan isn't hot enough...
Cook your eggs to your liking..
Salt and pepper them if you want.
Heat up your ciabatta rolls from costco until toasty on both sides..
Slap some mayo or mustard (or both) on the bread.
Get a few napkins if you like them runny.
Eat and enjoy


Eventually even in your Kmart Martha Stewart el-cheapo CI pans you can make slidey eggs.

Recipe #3 Cheezy Egg Sando's
Heat Pan (See #1)
Cook eggs..
Put a slab of your favorite cheese on them and cover for until melty.
Toast your bread in your other CI or CS Pan
Slather the bread in your favorite condiments.. Mustard and Mayo for me.


Recipe #4 Veggie Tostada's (or add your favorite meat)
In your grill CI cook some veggies use plenty of oil and get those grill marks!
On your CI or CS Griddle make some greasy corn tortillas until they're crispy
Make some Pico (just a little)
Shred some cabbage and squeeze some lemon over it - put it as a base on the tortilla
Add your veggies chopped up.
Place some thinly sliced Avocado over it (Unless you're squeamish and don't like it)
Sprinkle your pico over it.
Drop some shredded cheese on it.
Drizzle some vegan sour cream over it.
Squirt some Sriracha or your favorite hot sauce over it.
Mac out on it!! Slurp, nom, nom...






Keep it simple until you get the hang of it..

I am assuming that you all are not using CI on an electric stove top especially a glass one?
 
I always do bacon in my cast iron pan. Couple of weeks ago - rock fish. Unsalted butter and vegetable oil in the skillet. Flour, salt, pepper and heat. 2-3 mins on each side. Delicious!

My "pro-tip" for having steak & sweet potato for CI dinner - 1) pre-cook the sweet potato at home, & 2) put the steak in a ziploc bag with whatever marinade you like, it'll be thawed & seasoned by dinner time. I've tried horseradish and it's ... good. :teeth

Thanks for the memories of that camping trip, even my broken ankle enjoyed dinner & @SFMCjohn's morning cinnamon buns. :D
