I've watched every Naruto and Naruto Shippuden episode....talk about filler. It's gotten better at not putting so much in, but it's doing it right now with a lame back story of Naruto and Sasuke instead of getting it on with the great ninja war.............I'm hoping Naruto will have to kill Sasuke, and do it in front of Sakura, and when he does he'll look over at her with a smile on his face and say: "How do you like me now, bitch"!

No kidding about fillers. Bleach is the same way, although I don't think as bad.

Check out the pretty epic Korean anime, Wonderful Days

I used to watch a ton of this stuff back in my teens. Sounds like OP has most of the classics down already, excluding Ninja Scroll.

Here's my contribution, if you're into psychological thrillers try Perfect Blue.

^^^^Great flick by the late director Satoshi Kon, watch everything of his, it's some of the best you'll find. Millenium Actress, Paprika, Tokyo Godfathers and one other I can't remember are his.
Steamboy, by the director of Akira, is quite good.
Jin-Roh: Wolf Brigade was good IIRC.
Tekkon Kinkreet is fantastic, the artwork is really unique and the story and character development is some of the best you'll find.
X-The Movie has some beautiful visuals and is good.
If you haven't seen Vampire Hunter D: Bloodlust, which is the second movie, I'd suggest it.
Sword of the Stranger is pretty good, good visuals and a pretty decent story.
The Girl Who Leapt Through Time, is great, as is Summer Wars, both by the same director.
Porco Rosso, by Miyazaki is a must, as is Lupin III: Castle of Cagliostro.
Tales from Earthsea, by Miyazaki's son, was quite good.
My Neighbors the Yamadas, is a light, funny, great movie, but it's not dark and the artwork is minimalist. But I'd suggest it. It's quite uplifting.
Spriggan was alright.
Fist of the North Star is epic.
Afro Samurai is quite good.

The best anime series you'll find, in my opinion, is One Piece. But it's best read as a manga, as are Naruto, Bleach, Toriko and Berserk. Berserk is a masterpiece in manga form. But they're all anime also. If you need links to anything, I can hook you up. Once you get into manga though, it's all over, so many good series. One I would seriously suggest is Shin AngyĹŤ Onshi, it has a movie made of it called Blade of the Phantom Master, but it doesn't do the manga justice at all, it's one of the most beautiful and well written manga you'll find. It's a bit of a slow burner though, doesn't start really rolling until about 1/4 to 1/3 of the way in.

considering my avatar, i can't believe i didn't mention Initial D, lol.

I used to be a line cook, so maybe?

not an anime fan but this intrigues me.

Yakitate actually caught me by surprise, I mean really how can an anime about baking being interesting, but it turned out to be really entertaining. It pokes fun at a lot of other anime cliches and you can actually learn something about bread. If you like cooking contests you'll also enjoy this.

Shigurui: Death Frenzy
Ghost in Shell movies/series
Cowboy Beebop tv series and movie
Akira
Ninja Scroll
Vampire Hunter D movies
Macross: Do You Remember Love? (Japanese voices/English Subtitle version)

Good list. The one that isn't on Adam's list is Ninja Scroll, which is a damned fun flick.

Adam, I have quite a few fun ones (Helsing, etc) that I could loan/give you. PM me your address and phone number and I'll put together a care package for you.

Magical Shopping Arcade Abenobashi
Basilisk
GTO
Original Macross
Outlaw Star
Technolyze
Monster
Speed Grapher

Slightly motorcycle related, I think Rideback is still on NetFlix... I found it amusing and I'm not a big Anime guy.

And of course... there's that one episode of Golden Boy that's always stuck with me.

i reckon that is an FJ1200!!! or 1100 based on the color scheme

+1 on Rideback-- haven't found too many anime that I've enjoyed outside the 'standard' list of greats.

some that you may like:
bubblegum crisis (girls armed with hardsuits fight evil boy robots)
iczer (halloween lesbian love story)

if you want to give next-gen robo another try (better than macross plus):
gundam seed (two timing singing chick picks her man)
evagelion (you like AVP? How about AVHS = aliens vs high schoolers)

if you want to expand a bit:
galaxy angel (finding treasures in the most unlikely things)
tenchi muyo (guy defends his harem)

I think these you may like too (not anime):
fantastic planet (do you like pron?)
lightyear (What happens when you build a computer with AMD chips)

I've added some summaries..
