I am getting into making raviolis and am tired (lazy) of rolling the dough by hand. If you have a Kitchenaid pasta roller or set of rollers that are surplus to your needs please let me know.

Thank you sincerely for this, but as with my Friday pizzas, for which I used to buy the dough, I want to make my own pasta. I have done so once, and using a rolling pin takes a while. I have never heard of sfoglia; I will look around for some. There is a San Jose Deli on 13th st., Chiaramonte's, that I will check out first.you rang?
You can also buy sheets of sfoglia at delis and then just concern yourself with making the filling.![]()

it honestly doesn’t matter. a good high protein all purpose flour will work great! i like king arthur. you can always get semolina.I ordered the KitchenAid set today at a smoking price. Stay tuned for results if interested......
Oh, any suggestion on what type of flour to use for egg pasta dough?
