Here's a few offbeat reccomendations. First is Mariachi Entertainment System, who started their YouTube channel doing mariachi covers of music from NES games. They've since branched out to other game systems, as well as more traditional covers. Here's two of my favorites from them:

And The Punk Cellist, which is pretty much exactly what it sounds like. Dude started making recordings of cello covers of punk rock songs as a pandemic project, and it turned out as a pretty great combo. Of course, I'm biased, Cello is one of my favorite instruments, and punk is one of my favorite music genres.

Also seems like some folks are having trouble embedding YT videos. Basically all you need to do is copy the garbage pile of letters and numbers that immediately follow the '/watch?v=' part of the url - that's what goes between the Youtube tags.
