So the Wolf/Viking style cooktops are like $2000 but if they're better and longer lasting I think I could be convinced, or at least serviceable for 20 years :)

Depends on the use/abuse. We've got Subzero 600 series Refer and Freezer that I bought used during the last housing crash. No issues and I'm even bad about vacuuming out the coils. I love that they are not to deep as things can get forgotton in the back...
Bertazzoni convection oven/stove top is 10 years old and I've had to replace an igniter and thermocouple < $50 in parts. We went with the model that has no digital displays: simple manual valves. I'm pretty handy so we buy good quality stuff that is built strudy and simple.
 
Comes with both and they swap out in about 5 seconds.
I didn't realize you got both. I thought you had to pick a color. Viking/Wolf is kinda like Chevy/Ford truck argument. A realtor friend of mine told me people look for the red knobs when shopping high end houses. It's like those womens shoes with the red soles.

I've got a Viking and they're built to be rebuilt. At least mine is. It's commercial grade and you can replace any part pretty easily. Mine gets some decently heavy home use because I love to cook and it's never had a hiccup. The only problem has been the stencil wearing off aroudn the burner knobs.
