High revving, small displacement V8 engines

I like the idea of a big power, superfast electric car (the owner of our company has a Tesla S), but I want to be able to drive to San Francisco and, or LA, or Vegas, and back, the same day. The owner guy lives in the North Bay, he can drive down here, but not back in one day.

Sounds like he just needs to install a bigger charger. You're in a machine shop... 460v ought to be available for an hour, hhe'llbe good togo home!
 
It's easier to make a higher displacement lower revving engine reliable. Cost is the main factor why they aren't as popular as a larger displacement V8 or turbo'd V6/V8.

Plus, the average person prefers torque over top end power. Unless you plan on tracking a 4-door sedan, you're better off in most scenarios with a torquey higher displacement engine.
