Know all about Celiac, it F-ing Sucks and wreaks havoc on the body. Daughter and now all four of her children have it (celiac disease is considered to be genetically predisposed). Daughter will get extremely sick within 30-40 minutes from even the slightest cross contamination. "It's" an autoimmune disorder, and Celiac can lead to other disorders like infertility and miscarriage, severe migraines and multiple sclerosis (MS). Which she suffered from and sadly has developed MS, which was diagnosed about 6 years ago. That was about 8 years after she was diagnosed with Celiac and had been TOTALLY GF during that time. In her early teens and thru college doctors were treating her for Hypothyroidism which they could never get in balance. It's wasn't until after going through 3 different primary doctors that we got a new doctor at Stanford. At her first appointment this new doctor ordered a full blood workup and biopsy of small intestine. Bam... Celiac !

As for the MS, it's RRMS (relapsing-remitting MS) and this past year there have been no new leasions on her brain or spine. Soooo HAPPY for that! Although, severe migraines ever couple of months are problematic and can keep her in bed for a day or two. She is a REAL TROOPER!!! :)

Thinking I need to get a ride in between now and the new year or something, probably a lot of people on the roads right now though..
 
look. i just threw down food for an esteemed guest (@bikewanker) for five days spanning multiple genres of cuisine… while working full time over the holidays. i have more guests incoming for a few days, one of whom is celiac and for whom i have a safe menu prepared. i have spent hours in the kitchen. if using a ready pie crust somehow makes me less of a cook, whatever. the food is tasty. it’s made with love.
The esteemed is questionable but your cooking was not! I was quite pleased.

she put the non-meat fillings, because custom. Pulped meze-beans, rice, carrots, mushrooms, walnuts, (all minced), black, red pepper, a bit of salsa and/or pizza sauce . perhaps a dab of raisins..

First off, anyone who's bustin balls for using ready-made products while you cook can kick rocks with that shitty arrogant attitude. I have some pre-made filo dough in the freezer right now, ain't no way I'm making that shit every time I want a flaky piece of goodness.

I read very recently that they suspect celiac disease is so prevalent in the US because of our usage of hard red winter wheat as opposed to other strains used elsewhere. I'm sure you could score some eye talyin pasta from the source and test the theory, yeah?

That's definitely different than the ones I make. Mine are fresh steamed cabbage. The vegetarian filling is rice, tomato paste, roma tomatoes, onion, mint, cumin, salt, pepper, and if you have it, Turkish pepper paste. Top with fresh creamy yogurt when you serve it and :drool.

It could also be the chemicals used on a lot of the wheat grown. Thanks, Monsanto. :x When I was in Italy the last couple of times they do have a Celiac association there so I feel like, while their pasta might be less likely to cause an upset, I would be hesitant to serve it anyway.

Whow... step back, take a deep breath. I am certainly not "busting anybody's balls" with any kind of "shitty arrogant attitude" regarding their food choice or preparation! My intent was purely to be playful, cheerful, and not taken seriously.
Agree with celiac being "prevalent in the US because of our usage of hard red winter wheat as opposed to other strains", and with overly processed foods and additives. Sadly, gluten is used as a binder in a lot of non-food items like toothpaste, shampoos, medicines, supplements, lipstick, beers, deli meats, candy, the list goes on and in the US full ingredient lists aren't required!. EU countries now require (Regulation (EU) 1169/2011) that all prepacked foods include a list of ingredients and additives in their products. As for Italy, know first hand that celiac disease is being diagnosed more often.
