Ok, dipping my foot in to the E-thread....zizzzzt!

Ok, will be moving into our (nearly) new home with unpaved bike trails starting at the end of our street that will tie into miles and miles of paved trails as well in a little over a week.
I know this is a big mountain bike area ( Redding) but I don't plan on anything too serious off road (Have my Husky for that!).
My last bike was a gravel bike ( non-e) but don't think I will go the drop bars again. Thinking something with front suspension would be enough for light trail use but maybe I am wrong?
One local used e-bike that caught my eye : Giant E-Talon+ 29er . It is a size large and I am 5'-10" ( i used to be 6', WTF!!) .
I am now considered older (but less mature) at 65.
I don't want to spend more than $3k , don't want a tank or something that won't be in business next week.
Any suggestions ?
